Sweet & Savory ~~ Painted Desert Chili




Painted Desert Chili will not disappoint even if you don't live in the desert!  It makes enough to almost feed Coxey's Army, so this is the perfect recipe for Sunday Dinner or your upcoming Super Bowl Party. Serve it with green-chile cornbread and butter. Double yummy!


QUART JAR INGREDIENTS:

  • 2 Tbsp. dried onion flakes
  • 2 Tbsp. taco seasoning
  • 2 Tbsp. cumin
  • 2 Tbsp. paprika
  • 2 Tbsp. yellow cornmeal
  • 2 Tbsp. taco seasoning
  • 2 Tbsp. garlic powder
  • 2 Tbsp. chili powder
  • 2 Tbsp. dried parsley
  • 1 cup dried pinto beans
  • 1/4 cup small dried white beans
  • 1/2 cup small dried black beans
  • 1 cup dried kidney beans

ADDITIONAL INGREDIENTS:

  • 16-20 cups water
  • 1 medium onion, diced
  • 4 - 14.5 oz. cans diced tomatoes
  • 1 - 12 oz. can tomato paste
  • 1/2 cup cider vinegar
  • 1/2 cup brown sugar
  • 48 oz. tomato juice or V-8
  • 2  lbs. ground beef

DIRECTIONS:

  • Brown ground beef with diced onion in skillet.  Drain and add to 12 quart stock pot along with all other ingredients.
  • Bring to a boil; simmer for 3-5 hours or until beans are fully cooked.
  • You may need to experiment with the total amount of water you add to the recipe.  Some folks prefer a chili that sticks to the wall while others desire it with much more broth.  I happen to fall into the second camp.  In addition, if you have extra liquid, the cornbread can be added to the bowl of chili.
  • The beans do not need to be soaked prior to cooking; however, it's a good idea to rinse them in a colander before adding to your stock pot.

Sweet & Savory ~~ Chorizo Empanadas



Excellent empanadas!  After making the meat and potato variety, we want to try our hand at creating some dessert ones next time around.

EMPANADA DOUGH:

  • 2 1/4 cups white wheat pastry flour
  • 1 tsp salt, optional
  • 1/2 cup cold, unsalted butter, diced into cubes
  • 1 egg
  • 1/3 cup ice water
  • 1 Tbsp. distilled white vinegar

INSTRUCTIONS:

  • Mix flour and salt together in a mixing bowl
  • Blend in butter with fork or pastry blender
  • Beat together egg, water and vinegar
  • Add to flour mixture and mix with fork
  • Turn onto lightly floured bread board or counter top
  • Knead a few times to blend dough
  • Form into a rectangle on a cookie sheet
  • Cover with plastic wrap
  • Chill dough in refrigerator

EMPANADA INGREDIENTS:

  • 1 lb. ground chorizos
  • 1 large onion, diced
  • 6-8 cloves of garlic, finely chopped
  • 1 1/2 large red bell peppers, chopped
  • 1 bay leaf
  • 1 tsp. dried oregano
  • 2 medium sized yellow potatoes
  • 1 egg slightly beaten with 1 Tbsp. water

INSTRUCTIONS:

  • Brown ground chorizos with onions and garlic
  • Add red bell pepper and potatoes
  • Add spices
  • Cover and simmer until potatoes are tender
  • Cool mixture to room temperature 
  • Remove bay leaf

FILL EMPANADA DOUGH:

  • Divide dough into equal pieces (depending upon the size of the empanada maker you have, this recipe will yield somewhere between 6-12 empanadas.
  • Roll out piece of dough with a lightly floured rolling pin to about 1/8th inch thick
  • Spoon approx. 2 Tbsp. filling into each one 
  • Fold dough in half
  • Press edges together to seal



  • Place on baking sheet
  • Lightly brush empanadas with some of the egg wash
  • Bake in 400 degree oven for 25-30 minutes or until golden brown.
  • Cool on baking rack before serving

SERVING SUGGESTIONS:

  • Serve with fresh, sliced tomatoes and green olives
  • Serve with salsa, guacamole, and sour cream
  • These are tasty enough to be served without any condiments as the ground chorizos have enough kick of their own!

Sweet & Savory - Chipotle Chile Pepper Pinto Bean Soup





'Tis the season for delicious soups and stews. This one is sure to warm you from head to toe!

INGREDIENTS:
  • 2 cups pinto beans (I soak 2 cups of dry pinto beans overnight with 1 tsp. baking soda and water.  Drain in colander before placing inside crock pot, stock pot, or sauce pan.)
  • 1 medium onion, chopped
  • 2 Tbsp. garlic, diced
  • 1 cup boiled, diced bratwurst or smoked sausage (place sausage in medium saucepan and simmer gently for about 15 minutes which helps to remove some of the excess calories.)
  • 2 tsp. Chipotle Chile Pepper
  • 1 tsp. ground kosher salt, optional
  • 1 - 15 oz. can tomato sauce
  • 1 - 15 oz. can diced tomatoes, undrained
  • Add water to achieve desired consistency

HELPFUL SUGGESTIONS:
  • This recipe can be prepared in a stock pot or saucepan on top of the stove or in a crock pot.
  • If using a crock pot, cook on high level for approximately 6 hours to assure that beans are thoroughly cooked.
  • Serve with bread or rolls.
  • Diced potatoes can also be added to the recipe, if desired.

SERVING SUGGESTIONS:
  • Bake a pan of diced green chile cornbread and serve with this delicious soup.
  • Cooked rice is also a tasty accompaniment.

Sweet & Savory Friday ~~ Luscious Enchiladas


Enchiladas are a great entree any night of the week!  Suffice it to say, there are umpteen recipes with variations of fillings. Since I prefer one with more of a creamy or moist filling, here's my latest creation that I would like to share with you. So, here goes ~~

INGREDIENTS:
  • 2 cups diced cooked chicken
  • 1 - 4 oz. can diced mild green chilies
  • 1 - 4 oz. can sliced black olives
  • 1 - tsp. cumin
  • 1 - 10.5 oz. can Fat Free Cream of Chicken soup
  • 1 1/2 cups grated sharp Cheddar cheese
  • 2 - 15.5 oz. cans mild, medium, or hot enchilada sauce, whichever you prefer
  • Corn tortillas (I prefer the Don Pancho Golden Blend Brand)


DIRECTIONS:
  • In a medium bowl, thoroughly mix the chicken, chilies, olives, cumin, soup, and 1 cup of the Cheddar cheese.
  • In a medium sized frying or saute pan, warm one can of the Enchilada sauce.
  • Thoroughly coat each of the tortillas with the Enchilada sauce.
  • Fill each tortilla with filling, roll up, and place seam side down in a lightly greased 9 x 13 pan.
  • Combine one can of Enchilada sauce with the remaining sauce in the frying pan and pour over enchiladas placed inside 9 x 13 pan.
  • Cover with aluminum foil and bake at 300 degrees for 30 minutes or thoroughly heated.
  • Remove from oven and sprinkle with remaining 1/2 cup of Cheddar cheese.
  • Return dish to oven until cheese has melted.

SERVING SUGGESTIONS:
  • Serve with salsa, diced green onions, sour cream, guacamole, additional Cheddar cheese or variety of cheeses of your choice.

Sweet & Savory Monday ~~ Autumn Soup


A bowl of hot soup deserves a warm welcome on these cool, windy, rainy days! Paired up with bread, rolls, or crackers, your family or dinner guests will be happy diners.  I prepared this recipe in a crock pot, but it could be easily cooked on your stove top in a soup pan or saucepan.

INGREDIENTS:
  • 2 cups diced tomatoes
  • 1 medium zucchini, diced
  • 1 medium onion, diced
  • 2 Tbsp. garlic, diced
  • 2 Idaho Burbank Russet medium sized potatoes, diced
  • 1 cup carrots, diced
  • 1 cup corn
  • 1/2 cup salsa
  • 1 tsp. salt, optional
  • 1 tsp. freshly ground black pepper
  • 1 tsp. Italian seasoning
  • 1 cup corkscrew noodles or variety of your choice

DIRECTIONS:
  • Wash and prepare all veggies
  • Place inside crock pot or soup pan/sauce pan
  • Fill pan with enough water to cover vegetables
  • Cook until vegetables are tender

Here's a nifty 90 idea if you are using your crock pot ~~


Whoever designed these crock pot liners deserves more than a High 5! Before placing the ingredients into your crock pot, place liner inside which helps to make clean up so much easier.

I prefer to make large batches of soups and stews so that I can have left overs. In addition, these containers of soup can be frozen in order to be heated and served at a later date.



This is a great way to get all of your daily servings of vegetables in one fell swoop!  Be creative and add your own favorite veggies.  Another health aspect of preparing your own recipe is the absence of preservatives.

Sweet & Savory Tuesday ~~ Lentil Soup w/Parmesan Bread



When the calendar turns to Autumn, it's time to pull out the soup recipes!  Here's one of our family favorites for your enjoyment.

INGREDIENTS:

  • 1 lb. ground beef, browned in skillet
  • 1 medium onion, chopped
  • 1 pint jar diced tomatoes or 1 - 8 oz. can tomato sauce
  • 1/2 - 1 cup salsa
  • 3 - 4 carrots, sliced or cubed
  • 3 - 4 Idaho potatoes, cubed
  • 1 - 2 cups lentils, rinsed in colander
  • 3 quarts of water - give or take - depending upon how thin or thick you like your soups.  I like them with a lot of broth and my ever lovin' prefers them much thicker, so I strive to find a happy medium.
  • 1 - 2 Tbsp. Chili Powder
  • 2 tsp. Cumin
  • Salt & pepper, optional

DIRECTIONS:

Place all ingredients in soup pan or stock pot on stove and cook 2 - 3 hours or until lentils are tender  ~~~ or ~~~

Place all ingredients in crock pot and cook on high setting for approximately 6 hours.

**** NOTE:  Some people opt to prepare this recipe omitting the ground beef.  It's delicious either way!


PARMESAN BREAD INGREDIENTS:

  • 1 1/2 cups Bisquick Baking Mix
  • 1 Tbsp. sugar
  • 1 Tbsp. dehydrated minced onion
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup apple juice
  • 1/2 tsp. leaf oregano 
  • 1/4 cup Parmesan Cheese

DIRECTIONS:

  • Heat oven to 400 degrees.
  • Mix all ingredients except Parmesan cheese to a soft dough.
  • Spread dough in a greased round layer pan, 8.5 x 11 inches.
  • Sprinkle with Parmesan Cheese.
  • Bake 20-25 minutes. 
  • Cut into wedges.  
  • Serve warm.

Sweet & Savory Thursday ~~ Mexi-Chili Casserole


Savoring the last of the tomato crop from another successful season of gardening, I decided to garnish one of my long standing casserole recipes which dishes up a most delightful combination.  So, here goes:

STEP ONE:
  • Preheat oven to 375 degrees.
  • Brown 1 pound of hamburger in skillet with one Tbsp. minced garlic, drain.
  • Rinse and drain one 15. oz. can of red kidney beans in colander.

STEP TWO:
  • Stir together in large bowl:
  • Drained and rinsed red kidney beans
  • Browned and drained hamburger and minced garlic
  • one 15 oz. can of enchilada sauce (either mild or hot)
  • one 8 oz. can tomato sauce
  • one Tbsp. dehydrated minced onion
  • 1 1/2 cups shredded sharp Cheddar cheese
  • 1 cup corn chips (I used the Chili Cheese Variety)
  • 1 1/2 cups sour cream
  • 1 Tbsp. hot sauce (I used Cajun Sunshine)

STEP THREE:
  • Pour mixture into a two quart casserole baking dish.
  • Bake uncovered for 20-25 minutes or until mixture is bubbly.
  • Remove from oven and sprinkle 1/2 cup shredded sharp Cheddar cheese on top.
  • Garnish with corn chips.

SERVING SUGGESTIONS:
  • Place mixture inside tortillas and garnish with sour cream, diced green onions, guacamole, & fresh lime slices.
  • Serve as a regular entree with rice and/or corn.

Sweet & Savory Tuesday ~~ Pomegranate Pasta Sauce



INGREDIENTS:

  • 1 - 15 oz. can tomato sauce or use fresh tomatoes from your garden
  • 1 - 6 oz. can tomato paste or use fresh tomatoes from your garden
  • 1 cup pomegranate juice
  • 4 cloves diced garlic
  • 2 medium sized onions 
  • 1 - Tbsp. dried Italian seasoning or use fresh basil, oregano, and rosemary
  • 1 - Tbsp. olive oil
  • 1 - tsp. salt, optional
  • 1/2 tsp. freshly ground black pepper

INSTRUCTIONS:
  • Puree onions in food processor
  • If you are using dried herbs for Italian seasoning, grind them in your mortar and pestle


  • Combine all ingredients in a medium sized sauce pan
  • Stir until smooth
  • Bring to a gentle boil and simmer for at least 45 minutes. The longer you allow the sauce to simmer, the better the flavor will be.

SERVING SUGGESTIONS:
  • Serve with spaghetti noodles or pasta of your choice
  • Pair with tossed green salad and garlic french bread

I have such fond childhood memories of my maternal grandmother, Lenna Grace, sending a box of yummy pomegranates to our family each year for Thanksgiving.  The area in which she lived was very conducive to growing ones with exceptional color and flavor.

Sweet & Savory Friday ~~~ Retro 50's Casserole


INGREDIENTS:
  • 6-8 pork chops or thin loin chops
  • 2 cups rice
  • 3 3/4 cups water
  • 1 - 4 oz. jar diced pimentos
  • 1 pkg. dry onion soup mix
  • Seasoned pepper

INSTRUCTIONS:
  • Lightly brown pork chops and sprinkle with seasoned pepper, optional
  • Place rice in bottom of 9 x 13 inch baking pan
  • Heat water to boiling and pour in baking pan
  • Add package of onion soup mix
  • Add jar of diced pimentos
  • Mix thoroughly
  • Place pork chops on top
  • Cover with foil and bake at 350 degrees for one hour

SERVING SUGGESTIONS:
  • Since I just harvested fresh tomatoes from my horse trough gardening receptacle yesterday, I sliced some of those to serve with the pork chop and rice casserole.

  • No pork chop dish is complete without a little applesauce.  Pork chops and applesauce. That's sort of a tongue twister along the lines of Sufferin' Succotash!
  • A nice summer salad is a tasty compliment with any dinner.

When I was a young girl being raised on Sage Creek Farms, I have fond memories of my sweet mother, Rita, preparing this dish which is a family favorite. A variation of it first appeared in some type of farming magazine in the 1950's; ergo, I have titled my blog post Retro 50's Casserole.  I just thought that wording would add a little extra pizzazz.  What say you?

Tomatoes - Straight From The Horse's Trough




August delivers many things including fresh tomatoes along with corn on the cob and other healthy veggies. Those featured photo above include the Roma variety along with the Heinz slicing ones.  Roma's are good for making salsa or canning of tomatoes to use in your winter soups and stews. Here's the finished product all lined up:

Sweet & Savory Thursday ~~ Zucchini Boats



INGREDIENTS:
  • 2 large zucchinis 
  • 1 lb. hamburger
  • 1 - 15 oz. can Italian diced tomatoes or use fresh tomatoes 
  • 1 - 15 oz. can cut green beans, drained, or use fresh green beans
  • 1 - 15 oz. can dark red kidney beans, drained and rinsed
  • 1/2 cup minute rice
  • Grated cheddar cheese

INSTRUCTIONS: 
  • Wash zucchinis and pat dry with paper towels.
  • Brown hamburger, season to taste with salt and pepper (optional), drain and rinse.
  • Return hamburger to skillet and add tomatoes and both kind of beans.
  • Add 1 cup of water.
  • Bring mixture to a boil and add 1/2 cup of minute rice.
  • Cover and cook until rice is tender.
  • Cut zucchinis in half lengthwise and remove seeds.
  • Fill zucchinis with beef mixture.
  • Place a small amount of water in bottom of baking pan before placing zucchinis inside to bake.
  • Bake 30 minutes at 400 degrees.
  • Sprinkle with grated cheese.
  • Bake for an additional 10 minutes.

SERVING SUGGESTIONS:
  • Can be served with or without the outside zucchini skin.
  • This is a great way to make use of zucchini that has grown too large if you normally prefer them in a smaller size.
  • Very tasty with garlic or regular french bread.

I grew the zucchinis in my horse trough and my friend Bobbie contributed the recipe. Teamwork makes it happen!

Sweet & Savory Friday ~~ 4th of July Spread




INGREDIENTS:
  • Two 15-0z. cans Cannellini Beans
  • Two Tbsp. freshly squeezed lemon juice
  • Two Tbsp. diced garlic
  • 1/4 cup extra virgin olive oil
  • 1/4 cup Boar's Head Horseradish Sauce
  • 1 tsp. freshly ground kosher salt, optional

DIRECTIONS:
  • Rinse beans thoroughly with water and drain in colander
  • Place inside food processor
  • Add all other ingredients
  • Blend until smooth

Serve with crackers, bread, or condiments of your choice.  I used three grain sweet potato crackers, tomatoes, and greens.
